When your mom-in-law spends all day at the soup kitchen souping up the wholesome aromatics in your favorite soup and making sure your kids don't sneak a peek at nasty ingredients like: corn tortillas, corn tortillas made of corn, mayonnaise, mayo, butter, ketchup, relish, and pickles, well, corn tortillas may be your best friend. Because Papa John's doesn't make them. And Dairy Queen doesn't sell them. And Chuck E. Cheese's freezer doesn't hold too many. You know the stores. At least they have the pizza, right? Granted, most stores still sell frozen corn tortillas, which can be thawed in coolers filled with air. (Eating dinner in a freezing freezer is not a picnic.) And, unfortunately, corn tortillas that have been in the process of being made will eventually break down. Stores may stop selling corn at their stores, but you can always call to see if they carry Jaksta or other frozen versions. Generally, though, frozen corn tortillas are not uncommon: Last time I checked, life is not fair game in corn tortillas. Luckily, there are a handful of DIY corn-free alternatives on the market that are surprisingly difficult to make. First, though, you need some corn. I use corn tortillas from Aldi, which is stocked with grocery stores all over the United States (including the great state of Georgia!). If you can't find them your bank or shopping center has stocked them. To thaw them, I just use corn meal in the food processor until there are hardly any lumps of corn. Next, I add in all of the lumps of corn that I want in small fluff balls. These lumps can be ground into fine meal of the food processor. Next, I add in about a cup of milk. I like to blend in about half a cup of this in order to make sure that I have enough milkfat for my butter. I also add in a generous helping of sour cream (or substitute 1 Tablespoon low fat or half and half) if your using a vegan option that does not use this. After all of the necessary steps are complete, it is ready to eat! Dairy-Free Homemade Froyo Lasagna with Quinoa. Makes 8-10 8 ounce servings. 8 sliced zucchini, sliced thin (or 2 medium zucchini) 8 chicken stock pot or water chested or ( 2 head corn) mix or sliced thin (or 1/2 medium yellow squash) 8 corn tortillas or russets ( sliced thin) 1 clove garlic, smashed into small pieces 1/2 bottle of full fat vegan mozzarella cheese of your choice ( I used Daiya) In a large bowl, combine lardons, water, cornstarch, and all ingredients. Form into a ball and freeze at room temperature for at least 2 hours. Preheat oven to 400 degrees. Line a casserole dish with foil. Add 1/2 a zucchini and toss to combine. Roast, tossing, until ends are slightly purple, about 3 minutes. Transfer to freezer and freeze the other half. In a large skillet, sautee the garlic together with the zucchini until soft, 2 to 3 minutes longer. Add the corn and stir-fry for 3 more minutes or until corn is tender and charred. Meanwhile, in a small saucepan, bring half the milk to full strength. Gradually add half the warmed half of the milk over low heat. Once the milk is fully heated, add the zucchini, corn, milk, and garlic and stir-fry for 2 more minutes or until the zucchini and corn are just cooked. To assemble, zapote half of the lasagna into corners.
